## Long-Term Cilantro Storage 

### Freeze for later use
There are many ways to store cilantro in the freezer! Some methods last longer than others, but all of them are best utilized in cooked foods because the cilantro will lose much of its color and crispness when thawed. We also recommend adding cilantro at the end of cooking a meal since its flavor is sensitive to heat. Try these options out and see what works best for you!

**Freeze on its own:**
Vacuum seal small portions of cilantro to put in the freezer so you can thaw and use just what's needed. You may opt to blanch the cilantro before freezing to help preserve some of its color, but it’s not necessary. This method should keep your cilantro in good shape for 1-3 months as long as you avoid freezer burn!

**Freeze in ice cube trays:**
Using ice cube trays to freeze cilantro is also a great idea since they can preserve your cilantro for 6 months to a year and the trays typically hold 1 TBSP, making it very easy to measure out what you need come cooking time. 
- Freeze in water - great for soups like Pozole and in dishes that don’t require much oil like Larb! 
- Freeze in oil - great for curries and stews! 
Whether you choose oil or water, the process is similar. Either loosely chop your cilantro or blend it in a food processor, then add to ice cube trays and cover with liquid to protect the herb from oxygen which causes freezer burn.

### Drying Cilantro
Dried cilantro isn’t very common, but it can work in a pinch when you want a subtle taste or really just don’t want it to go to waste. It can add a punch into soup or saucy dishes, but we don’t recommend trying to substitute it for something like mojo or in guacamole! To do so, you can air dry cilantro by tying sprigs and hanging them upside down in a dry space for approximately a week Alternatively, you can use a traditional dehydrator, or your oven on it’s lowest temp (200F).

When many of us think about growing tomatoes, we think about managing pests, proper pollination and how to handle our abundant harvests. All of this is valuable, yet something often overlooked that has a major impact on both the health of the plant and the fruit it may yield is spacing. 

Although it depends on the type of tomato - determinate or indeterminate - and your planting method, a good rule of (a green!) thumb is to place tomato plants about *18-24 inches apart*.

It may feel like your plants are very far apart at first, but you’ll be glad you spaced them this way once your tomatoes start to grow as the distance between them can highly impact your harvest and any potential disease spread.

## How does spacing impact disease?
When plants are too close together, the leaves tend to stay damp making it easy for disease to flourish and spread. You’ll need proper spacing to avoid wet leaves touching and to allow the sun to do its work drying!  Additionally, insect infestations are more likely to occur when tomatoes are grown too close together since it’s easier for them to move from plant to plant. 

## How does spacing impact harvest yield?
As with all plants, there’s a competition for resources in your garden, yet tomatoes are extra greedy in their need for water, nutrients, and sunlight. If you place plants too close together, they may experience stunted growth. And if they do somehow grow large, they may not be able to produce as much fruit (or the fruit may not fully ripen).
Another way overcrowding can negatively impact yield is by limiting pollination since it will be harder for helpful pollinators to get to the flowers on your tomato plants!

### Determinate (bush) 
Determinate tomatoes yield all of their fruit in a short window of time, and grow to just to a certain height. Because of this, they do well in containers or on wire cages. 
 ### Indeterminate (vine)
Indeterminate tomatoes continue to yield for up to three months, until the first frost of the year. These plants do well on a trellis so they can continue to grow, but wire cages and even ground sprawl work too. If you opt for the latter options, we recommend increasing the spacing even further (2 feet for trellis, 3-4 feet apart for ground or cage). 
*Tip*: The variety of tomato may impact spacing needs as well, so make sure to read the seed packets you buy; most of them give specific recommendations! 

## Planting Methods 
- Like mentioned above, if growing in full gardens or raised beds, leave four feet between rows to increase accessibility and allow for extra sun and air. 
- Square foot gardening recommends one tomato plant per four square feet, but you can get away with one plant per square foot if you are diligent about pruning and growing vertically on a trellis or stake. 
- Container gardening is great for determinate tomatoes and means you can place plants closer together since they won’t be fighting for the same nutrient and water resources!

Typically it takes 18-22 weeks from seed to harvest, but knowing the perfect time to pick a tomato can be more complex. It’s a terrible feeling when you either get mushy tomatoes from picking too late, or flavorless ones from picking too early. 

Luckily, these tips can help guarantee your harvest is as delicious as possible! 

## The basics: 
You’ll know when to harvest tomatoes by examining three things: **color, firmness and maturity**. 
- For most tomatoes, harvest once the fruit is fully red (or close to it) and just a tad soft. 
- For varieties that aren’t typically red when fully ripe, you will want to check on your harvest schedule to see how mature the plant is. 
- Raddish can help you keep track of your planting schedule and remind you when it should be time to start harvesting! 
- When in doubt, pick a little early since tomatoes will continue to ripen after you’ve harvested them. 

One of our biggest tips is to just trust your judgement. When you think a tomato is ready to pick, try one! You want the fruit to come off the vine easily (if you need to yank, it’s not ready) be full of color, smell earthy, and taste great.

## Getting more specific: 

### Allowing tomatoes to ripen on vine or on your counter: 

**Vine-ripened tomatoes** offer the best flavor, but aren’t always an option if the temperature or sunlight gets too extreme or you can’t check in on them as often. To harvest vine-ripened tomatoes, pick when the tomato is fully covered in its ideal color, it comes off its stem easily, and the skin hasn’t yet cracked. If the skin cracks, it’s more likely to attract pests so keep an eye out! 

**Indoor ripening**: If the temperatures where you’re gardening consistently go over  90°F or below 60°F, it may be best to allow your tomatoes to ripen indoors. 
- Many know that frost or cold temperatures can damage tomatoes, but did you know that too much sunlight can actually stop the ripening process? This is why sunshades or leaving some extra leaves to protect the fruit are recommended. 
- Pick when tomatoes are matured or basically fully grown, but when they have only started to get their color (this is often called the **“breaker” stage**). Color arrives first on the base of the fruit as it works its way up to the “shoulders” where it connects with the vine. As long as there is some color appearing, your green tomato can be picked and successfully ripened indoors.
- You can harvest tomatoes that are pretty green, but you want to make sure they’ve at least “matured” or grown as much as they can before ripening. If you pick a tomato that is too green, it might not fully ripen or the fruit will get mushy over time.
